Ingredients

  • 2 large onions, chopped
  • 2 celery ribs, chopped
  • ½ cup butter (1 stick)
  • 14 ounces chicken broth (or 1 can)
  • 1/3 cup minced fresh parsley
  • 2 tsp. rubbed sage
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp poultry seasoning*
  • About 12 cups of cubed sourdough bread (that’s been dried out)

Directions

  1. Cut or tear the sourdough bread into cubes, put it on trays, and let it dry out for 2-3 days before making this recipe.
  2. In a large pan, sauté the onions and celery in butter until tender.
  3. Add the broth and seasoning.  Mix the pan mixture well.
  4. Get a large bowl and place the bread cubes in it.  Add the pan mixture and toss to coat.  (Add warm water if needed to reach the desired moistness.)
  5. Stuff the turkey and cook it.

** If you don’t have poultry seasoning, you can make it by combining:

  • 3 tablespoons ground sage
  • 2 tablespoons dried thyme
  • 2 tablespoons dried rosemary
  • 1 tablespoon dried marjoram
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper

Note if there is extra stuffing, bake it in a pan.
