Kentucky Derby Pecan Bars Recipe

What a delicious dessert for company, a potluck, or a small group get together. They taste like pecan pie and your friends will love them! I ate one or two of these while watching the Kentucky Derby, yum.

Total Time: Prep: 10 min. Bake: 35 min. + chilling.

Makes: About 4 dozen (depending how to cut them)

Ingredients

Bottom Part

  • 2 cups all-purpose flour
  • 1/2 cup confectioners’ sugar
  • 1 cup butter, softened

Top Part

  • 1 can (14 ounces) sweetened condensed milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 package (8 ounces) milk chocolate English toffee bits
  • 1 cup chopped pecans

Directions

  1. In a large bowl, combine flour and sugar. Then cut in small cubes of cold butter until mixture resembles looks coarse. Press firmly onto the bottom of a greased 13×9-in. baking dish. I rolled it out using a small rolling pin. Bake at 350° for 15 minutes.
  2. While that is cooking … in a large bowl, beat the sweetened condensed milk, egg, vanilla and salt until smooth. Stir in toffee bits and pecans. Spread evenly over baked crust.
  3. Bake again until lightly browned, 20-25 minutes longer. Let it cool down.
  4. Cover and chill in refrigerator; cut into bars (small, square, or rectangular). Store in refrigerator until you are ready to serve.
