Easy Mediterranean Shrimp Pasta

We are all busy, running in different directions, and sometimes we need a delicious dinner idea that’s both speedy and wholesome.

Delight your taste buds with this mouthwatering Mediterranean Shrimp pasta! Bursting with vibrant colors and irresistible flavors from the likes of broccoli, sun-dried tomatoes, garlic, and parmesan cheese, it promises to be both filling and tasty.

(Makes about 4 servings)

Ingredients

  • ½ lb. of spaghetti
  • 4 cups small broccoli florets
  • ½ cup Italian dressing
  • 1 lb. uncooked, deveined peeled shrimp
  • ½ cup chopped sun-dried tomatoes
  • 2 cloves of minced garlic
  • ¼ cup grated parmesan cheese

Directions

  1. Cook spaghetti in a large pot until nearly done. Then, add the broccoli to the boiling water for the last 2 minutes. Don’t overcook the broccoli like I did.
  2. Meanwhile, heat up the Italian dressing in a skillet on medium-high heat.  Add the shrimp, garlic, and sun-dried tomatoes to the skillet.  Cook and stir for 3-4 minutes or until the shrimp turns pink.
  3. Drain the spaghetti and broccoli mixture, then pour into a large bowl. 
  4. Pour the shrimp mixture into the same large bowl.  Then add the parmesan cheese and toss.
