
Easy Blueberry Cobbler
This is the time of year when blueberries are ripe and plentiful. We have a gallon of berries in our freezer and almost every morning I make homemade oatmeal with blueberries, brown sugar, and nuts. Also a warm blueberry cobbler really is a great dessert that everyone likes. Plus blueberries are low in calories and are chocked full of antioxidants which are help protect the body against the damaging effects of free radicals and the chronic diseases associated with the aging process. Ingredients o • 3 cups blueberries o • 1 tablespoon lemon juice o • 1 cup all-purpose flour o • 1 cup sugar o • 1 beaten egg o • 6 tablespoons melted butter
Directions
1. Heat oven to 375. 2. Put berries in a 10x6x2 inch baking dish. 3. Sprinkle with lemon juice. 4. Mix the sugar, flour, and egg, stirring until resembles coarse meal. 5. Spread this over the berries. 6. Drizzle melted butter over berries. 7. Bake for 30 minutes. 8. Serve warm with a dollop of whipped cream on side, if you choose.

Cream Cheese Banana-Nut Bread
This is a Southern Living recipe. Very yummy—I’m always taking it work. Ingredients o 3/4 cup butter, softened o 1 (8 ounce) package cream cheese, softened o 2 cups sugar o 2 large eggs o 3 cups all-purpose flour o 1/2 teaspoon baking powder o 1/2 teaspoon baking soda o 1/2 teaspoon salt o 1 1/2 cups mashed bananas (about 4 medium bananas) o 1 cup chopped pecans, toasted (optional) o 1/2 teaspoon vanilla extract
Directions 1. Beat butter and cream cheese at medium speed with electric mixer until creamy. 2. Gradually add sugar, beating until light and fluffy. 3. Add eggs, 1 at a time, beating until just blended. 4. Combine flour, baking powder and soda, and salt. 5. Gradually add this to butter mixture beating at low speed just until blended. 6. Stir in bananas, pecans, and vanilla. 7. Spoon batter into 2 greased and floured loaf pans (or 4 mini loaf pans). 8. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. 9. You may need to shield the top with foil for last 15 minutes to prevent browning. 10. Cool bread in pans for 10 minutes, remove from pan, and let cool additional 30 minutes. |

Romano's Macaroni Grill Pasta Milano
This is an incredible dish that everyone loves to eat. The sun-dried tomatoes really make the dish. It’s easy to make as long as you have all the ingredients on hand and you can grill the chicken. Ingredients 6 ounces butter 18 ounces grilled chicken, sliced 12 ounces sun-dried tomatoes 12 ounces mushrooms, sliced 6 tablespoons finely grated parmesan cheese 36 ounces roasted garlic cream sauce (or make your own with heavy whipping cream, garlic and parmesan cheese) 36 ounces bow tie pasta (about 6 oz. pasta per serving) Italian parsley sprig, if desired
Directions 1. Cook the pasta as directed on package. 2. Meanwhile, sauté butter, sun dried tomatoes and mushrooms about 30 seconds. Add the roasted garlic cream sauce and Parmesan; heat thoroughly. 3. Remove pasta from water and drain. Add pasta to the sauté pan and mix well. Garnish with Parmesan cheese and Italian parsley sprig.
